KENTARO HATASA
畑佐 健太郎
Born in 1987, from Aichi Prefecture.
After working at "Paul Bocuse" (Tokyo) and serving as Executive Chef at "Kobe Geihinkan" (Hyogo), he honed his skills at the Michelin 1-star "Restaurant Charlemagne" in Burgundy, France. He returned to Japan the following year and served as Sous-Chef at "Thierry Marx"(Tokyo). Afterward, he gained experience in modern Spanish cuisine, garden restaurants, and gastronomy. In April 2025, he became the second Executive Chef of MOSS CROSS TOKYO Shibuya.
